CAPOGIRO: CHEF PASQUALE D’AMBROSIO & THE MICHELIN STAR

Chef Pasquale D’Ambrosio leads a kitchen that prioritises genuine local identity over international convention — the ingredients come from small Sardinian producers, the supply chain is deliberately short, and the approach to sustainability integrates environmental ethics with culinary responsibility. The result is a tasting menu that reads as a genuine expression of Sardinian land and sea — dishes like fusilloni with black lemon butter, mussel water and large mussels with spirulina caviar demonstrate a kitchen that is technically accomplished without being detached from its territory. The Michelin star awarded in November 2025 confirmed Capogiro as the only new starred entry in northern Sardinia for 2026 — alongside ConFusion, making Baia Sardinia and Porto Cervo the epicentre of fine dining on the island.
